Very true. You only need to visit some of the admin forums around the net to find some horror stories of well known hosts not restoring data or recovering servers when things turn to custard. It's a pleasure knowing MDD Hosting has your back when it matters.

What happens to any email being sent to addresses hosted on these servers at the moment? Do they get bounced back as undeliverable, or are they being stored somehow or what?

Really appreciate all the work your going through with this. I know how temperamental servers can be and I also know that some other (big named) hosts wouldn't be trying this hard to, or even be able to, recover user data. So again thanks for all your efforts and fingers crossed that this time works eh.
